 Unfortunately, fresh whole eggs do not freeze, since the cold could cause the shell to burst.

• Liquid whole eggs freeze easily for four months, if lightly beaten and stored in a closed container.

• Raw egg yolks also freeze for four months. To prevent them from freezing, add a pinch of salt (for any savory recipes) or 1 tsp. and a half teaspoons sugar (for sweet recipes) for four egg yolks.

• Raw egg whites can be stored for up to nine months.

• Whole hard-boiled eggs and cooked egg whites tend to become rubbery when frozen. It is therefore not advisable to freeze them. However, a hard-boiled egg yolk freezes easily and can be stored for up to a year.

Liquid eggs sold in the supermarket are pasteurized. This is why their shelf life in the refrigerator is longer than that of fresh whole eggs. They also keep for four months in the freezer, like liquid whole eggs.

TO FACILITATE THE USE OF FROZEN EGGS IN THE KITCHEN

A large, whole egg is 3 tbsp. frozen whole egg; one yolk, 1 tsp. frozen egg yolk and a white, 2 tbsp. frozen egg white.
